Vegetarian Bean Stew Cheddar Nachos
Bean stew, rice, avocado and mushy nachos in a single delightful bowl!
Fixings
Simple Bean Stew
200 g Feathered creatures Eye Mexican Bean Blend, (a blend of red kidney beans, dark beans and chickpeas)
1 tbsp olive oil
1 little red onion, diced
2 garlic cloves, minced/finely hacked
1/2 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp hot stew powder
A touch of salt and pepper
1 red chime pepper, cut
400 g tin of hacked tomatoes
Gooey Nachos
Approx 4 extensive bunches of tortilla chips
100 g ground veggie lover cheddar, (ideally one that liquefies!)
Discretionary additional items
250 g cooked rice, (I cooked mine with some paprika and tomato puree)
1 avocado, split, hollowed and cut
New corainder, torn
Directions
Make the bean stew
Warmth the olive oil in a pot on a medium warmth. Saute the onions, garlic and pepper for 4 minutes, until mollified.
Include the flavors, salt and pepper at that point cook for a further moment.
Mix in the beans and hacked tomatoes. Spread and cook for 5 minutes.
Set up the gooey nachos
Warmth the flame broil.
Disperse the nacho/tortilla chips onto a preparing plate and sprinkle with the veggie lover cheddar.
Cook for a couple of minutes until the cheddar begins to liquefy, at that point expel from the warmth.
Amass the bowl
Include a serving of the bean stew to each bowl, alongside some rice, avocado or some other additional items you like, leaving room on one side of the bowl for the nachos.
Spot the nachos on the opposite side of the bowl. Serve and appreciate!
