BALSAMIC SIMMERED NEW POTATOES WITH ASPARAGUS 

A straightforward, delightful side dish including occasional asparagus and new potatoes with the unobtrusive sweetness of balsamic vinegar. 


Fixings 
1 kg new potatoes, (for example, Jersey Imperial or another little waxy assortment) cut into quarters 

250 g asparagus tips cut into 2 inch pieces or split 

2 tbsp garlic-mixed olive oil 

4 tbsp balsamic vinegar 

A liberal squeeze of salt and pepper 

Directions 
Preheat stove to 200C/390F. 

In an extensive cooking tin, include the olive oil, balsamic vinegar and salt. Add the potatoes and hurl to coat completely before simmering for 20 minutes. 

Following 20 minutes, include the asparagus with some additional olive oil, if necessary. Hurl to coat and cook for a further 15 minutes. 

Season with additional balsamic vinegar, salt and pepper.
